To understand the true physiology of the stomach continue to read.

The stomach when introduced food begins to increase in alkalinity NOT in acidity. The cover cells of the stomach produce sodium bicarbonate to alkalize the food ingested NOT
digest the food ingested. The waste product of the alkaline compound sodium bicarbonate is hydrochloric acid.

The contribution of sodium bicarbonate is the effect of the food being alkalized at a pH of 8.4 and NOT digested with a pH of 3 to 1 from the waste product of sodium bicarbonate production - the hydrochloric acid.

The hydrochloric acid left in the stomach is the evidence that the food was alkalized by the food taking up the sodium bicarbonate. After the food uptakes the alkaline sodium bicarbonate, all that is left is the smoke of acid residues in the stomach.

When you eat or drink acidic food you cause the stomach to produce increased amounts of sodium bicarbonate which in turn creates and equal amount of hydrochoric acid. The stomach draws from the blood and tissues for the elements to produce alkalizing sodium bicarbonate.

With a highly acidic diet this can cause a deficiency in alkaline minerals in the blood and tissues leading to sickness and disease. Welcome to the New Biology and the true physiology of the stomach.
